I've seen it used in sauces. It also pops up in those silly stories
about 'the world's most expensive burger/sandwich', where it seems to
feature prominently in bumping up the price per bite. Personally, I
only ever like a couple of bites of foie gras; after that, the
richness just overwhelms me.
