Poach it in flavoured milk (curry leaves, cumin, coriander), flake it 
and stir it through rice for kedgeree?

Awesome supper for hot summers evenings.

Less summery would be to make a creamy cheesy sauce (parmesan and 
cheddar work well) and bake it int he oven with a gratin topping.
