Now this is a LONG time after you asked the question, Joanne, but I've 
just dug out the book I wanted to recommend.  "Julie Stafford's 
Vegetarian Cookbook" ISBN 0670886653 or you can give me a cut of your 
Amazon spend here:

It's really really good.  You'll have to get used to Australian 
terminology (eggplant = aubergine, zucchini = courgette) and ignore her 
recommendations to use apple juice concentrate as a sweetener -- just 
use sugar or honey.
