While you guys are on that topic,
Anyone with any favourite ways of cooking Okra?
I'm a fan, but it's very variable in restaurants/take aways and I have
ruined it at least twice experimenting.

*** Saag Aloo Bathau Subji ***

1) 2 medium sized onions, sliced
2) 3-4 cloves of garlic, chopped
3) 1 inch piece of ginger, chopped
4) 1.5 lbs finely chopped spinach (frozen)
5) 4-5 medium sized potatoes, cut into 0.5 inch slices
6) 2 medium sized aubergines, cut into 0.5 inch slices
7) 3-4 pieces from a tin of tomatoes with about 2 tbsp of the juice
8) 2-3 tsp garam masala
9) 1.5 tsp salt
10) 2 tsp coriander powder
11) 0.5 tsp chilli powder
12) 2 tsp turmeric powder
13) 3 tbsp sunflower oil

Fry (1), (2) & (3) in the oil until golden brown. Add the tomatoes and 
also
a little bit of water. Let simmer then add all the spices in (8), (9), 
(10),
(11) & (12). Let it cook with another tablespoon of water. Allow to
simmer
very well until the oil surfaces thru' a little. Then add (4), (5) &
(6).
Mix well until the spices mixture is well blended into the veg. Cover &
keep for 5 mins, then add enough water to cover all of the blended veg
mixture (the spices and veg). Uncover and cook further until potatoes
are
properly cooked. Allow all of the water to dry up so as to give you a
completely dry veg dish.
