What about fresh parsley, basil and some oregano?

I just looked this up on google and the one constant I can find with
herbs is 'minced green onion' everything else seems to be throw in it
what you fancy!

I had lamb tartare recently, and we guessed at most of the ingredients.

We weren't able to determine the herbs used, and the waiter just
shrugged 
when we asked.  (He had an offhanded manner, but was very good at mixing

drinks and matching wine to food.)

The tartare had the following, and I'd appreciate suggestions for what 
herb or herbs to add:

little cubes of lamb
shoyu sauce
a healthy amount of salt
orange or lemon juice (we disagreed on this, but I'd likely use orange 
juice)
sesame oil
sesame seeds

The herbs looked a bit chivey, but didn't taste much like chives.

Any suggestions for what herbs to try?
