Good idea; I usually make them when I've got remaining eggwhite from
another project, but haven't done so in a while. Time to change that

edible paper is the way to go in my opinion. That would mean rice
paper in this case. It makes sure that it doesn't stick to your baking
surface just as well as the other options, and gives an extra quality
to an already good cookie. Bonus!
