Great idea, though I obviously won't be there as Bermondsey is a bit of 
a journey from Sydney.

Other option is to ask your local friendly butcher during a quiet 
moment.  I know my awesome butcher[1] in Barons Court gave me a demo 
after I asked while buying a ham for Xmas.
